Vegetarian Chili
Chili con carne, a popular dish in Texas, inspired the creation of vegetarian chili as a meatless alternative.

Heat olive oil in a large pot over medium heat.

Add onion, garlic, bell pepper, carrot, and zucchini. Cook until vegetables are tender.

Add canned tomatoes, kidney beans, black beans, corn, chili powder, cumin, paprika, salt, and pepper. Stir well.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer for 20 minutes.

Remove from heat and let it rest for 10 minutes.
