Ingredients
  • 4 slice Whole grain bread
  • 1 medium Bell pepper
  • 1 medium Zucchini
  • 1 small Red onion
  • 1 small Eggplant
  • 2 tablespoon Olive oil
  • 1 tablespoon Balsamic vinegar
  • 1 cup Fresh basil leaves
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 4 slice Vegan cheese
Instructions
  1. Preheat a grill pan or panini press.
  2. Slice the bell pepper, zucchini, red onion, and eggplant.
  3. In a bowl, toss the sliced vegetables with olive oil, balsamic vinegar, salt, and black pepper.
  4. Grill the vegetables on the preheated pan for 3-4 minutes on each side, until charred and tender.
  5. Remove the vegetables from the pan and set aside.
  6. Spread vegan cheese on two slices of whole grain bread.
  7. Top with the grilled vegetables and fresh basil leaves.
  8. Cover with the remaining bread slices.
  9. Place the sandwiches on the grill pan or panini press and cook for 4-5 minutes, until the bread is toasted and the cheese is melted.
  10. Remove from heat and serve hot.
