  1. Heat olive oil in a large pot over medium heat. Add chopped onions, carrots, celery, and minced garlic. Cook until vegetables are tender.
  2. Add chopped tomatoes, zucchini, green beans, cabbage, kidney beans, ditalini pasta, vegetable broth, bay leaf, Italian seasoning, salt, and black pepper to the pot. Bring to a boil.
  3. Reduce heat to low and simmer for 20 minutes, or until pasta and vegetables are tender.
  4. Remove bay leaf and serve hot. Top with grated Parmesan cheese if desired.
