Heat oil in a pan and add ginger, garlic, and green chili. Saute for a minute.

Add turmeric powder, coriander powder, cumin powder, red chili powder, garam masala, and salt. Mix well.

Add chopped vegetables (potatoes, carrots, cauliflower, and green peas) and mix well.

Cover and cook for 10-15 minutes until the vegetables are cooked.

Garnish with fresh coriander leaves.
