Ingredients
  • 1 cup Lentils
  • 4 cup Vegetable broth
  • 2 medium Carrots
  • 2 medium Potatoes
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 2 tablespoon Tomato paste
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoon Olive oil
  • 2 tablespoon Fresh parsley
Instructions
  1. Rinse the lentils and set aside.
  2. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until fragrant.
  3. Add diced carrots and potatoes, cook for 5 minutes.
  4. Stir in tomato paste, cumin, paprika, salt, and black pepper.
  5. Add lentils and vegetable broth, bring to a boil.
  6. Reduce heat, cover, and simmer for 30 minutes or until lentils and vegetables are tender.
  7. Remove from heat and let it rest for 10 minutes.
  8. Garnish with fresh parsley before serving.
