Vegetable Fried Rice
Fried rice is believed to have originated in China around 4000 years ago and was initially made from leftover rice to avoid wastage.

Heat vegetable oil in a large skillet or wok over medium heat.

Add chopped onion and minced garlic cloves. Cook until onion is translucent.

Push the onion and garlic to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked.

Add mixed vegetables and cook until tender.

Add cooked rice, soy sauce, sesame oil, salt, and black pepper. Stir-fry for 2-3 minutes until well combined.

Garnish with chopped green onions and serve hot.
