Vegetable Casserole
Casseroles have been a popular dish since ancient times, with evidence of similar recipes dating back to ancient Rome.

Preheat the oven to 180°C (350°F).

Peel and chop the potatoes, carrots, zucchini, bell peppers, onion, and garlic.

Heat olive oil in a large skillet over medium heat. Add the chopped vegetables and sauté for 5 minutes.

Season with salt, black pepper, and mixed herbs.

Transfer the sautéed vegetables to a casserole dish.

Pour vegetable broth over the vegetables.

Sprinkle grated cheese on top.

Cover the casserole dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 10 minutes, or until the cheese is golden and bubbly.

Let the casserole rest for 10 minutes before serving.
