Wash the rice and soak it in water for 30 minutes.

Heat oil in a large pan and add cumin seeds, cinnamon stick, cardamom pods, and bay leaf.

Add sliced onions and sauté until golden brown.

Add ginger-garlic paste, green chili, and sauté for a minute.

Add chopped tomatoes, turmeric powder, red chili powder, and biryani masala powder. Cook until the tomatoes are soft.

Add mixed vegetables, mint leaves, coriander leaves, cashews, raisins, and salt. Mix well.

Drain the soaked rice and add it to the pan. Mix gently.

Add water and bring it to a boil.

Reduce the heat, cover the pan, and let it simmer for 15-20 minutes or until the rice is cooked and the vegetables are tender.

Remove from heat and let it rest for 10 minutes. Fluff the rice with a fork before serving.
