Tourtière is a traditional French-Canadian meat pie, but this vegan version offers a plant-based twist on the classic dish.

This is vegan, gluten free and high protein recipe. Dish can be prepared in 100 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 19.

  1. In a large pan, sauté the onion, carrot, celery, and garlic until softened.
  2. Add mushrooms and cook until browned.
  3. Stir in lentils, vegetable broth, soy sauce, and ground flaxseed. Simmer for 20 minutes.
  4. Meanwhile, boil the potatoes until tender. Drain and mash with plant-based milk.
  5. Preheat the oven to 375°F (190°C).
  6. In a separate pan, heat vegetable oil and sauté the dried thyme, dried sage, salt, and black pepper for 1-2 minutes.
  7. Combine the lentil mixture with the sautéed spices.
  8. Roll out the vegan puff pastry and line a pie dish with it.
  9. Fill the pie dish with the lentil mixture and top with the mashed potatoes.
  10. Brush the pastry edges with water and cover with another sheet of puff pastry.
  11. Seal the edges and cut slits on top for ventilation.
  12. Bake for 40-45 minutes, or until the pastry is golden brown.
  13. Let it rest for 10 minutes before serving.
