Ingredients
  • 1 cup Okara
  • 1/2 cup Almond flour
  • 1/4 cup Coconut sugar
  • 1/2 teaspoon Baking powder
  • 1 teaspoon Vanilla extract
  • 2 tablespoon Almond milk
  • 1/4 cup Dried cranberries
  • 1/4 cup Chopped almonds
Instructions
  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the okara, almond flour, coconut sugar, baking powder, vanilla extract, and almond milk. Mix well until a dough forms.
  3. Fold in the dried cranberries and chopped almonds.
  4. Shape the dough into a log and place it on the prepared baking sheet. Flatten the log slightly with your hands.
  5. Bake for 20-25 minutes, or until golden brown and firm to the touch.
  6. Remove from the oven and let it cool for 10 minutes.
  7. Carefully slice the log into biscotti shapes, about 1/2 inch thick.
  8. Place the biscotti back on the baking sheet and bake for an additional 5 minutes on each side, or until crispy.
  9. Remove from the oven and let it cool completely before serving.
