  2. In a bowl, combine the dates and boiling water. Let it sit for 10 minutes.
  3. In a separate bowl, mix the flaxseed meal and water. Let it sit for 5 minutes to form a gel.
  4. In a large bowl, cream together the coconut oil, maple syrup, and vanilla extract. Add the flaxseed gel and mix well.
  5. In another bowl, whisk together the almond flour, gluten-free flour blend, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the coconut milk. Mix until well combined.
  6. Drain the dates and mash them with a fork. Add the mashed dates and baking soda to the batter. Mix well.
  7. Pour the batter into the greased baking dish and smooth the top. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  8. While the pudding is baking, prepare the caramel sauce. In a saucepan, combine the coconut sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens and turns into a caramel sauce.
