Preheat the oven to 425°F (220°C).

Trim and halve the radishes. Toss them with olive oil, lemon juice, maple syrup, salt, and black pepper.

Spread the radishes on a baking sheet and roast for 15-20 minutes, or until tender and lightly browned.

In a large bowl, combine the roasted radishes, mixed greens, sliced avocado, thinly sliced red onion, pumpkin seeds, and fresh mint.
