In a saucepan, bring water to a boil. Add salt.

Slowly pour polenta into the boiling water, stirring constantly.

Reduce heat to low and continue stirring until polenta thickens, about 5 minutes.

Remove from heat and let it rest for 10 minutes.

Preheat the oven to 400°F (200°C).

Grease a baking sheet with olive oil.

Transfer the polenta to the baking sheet and spread it evenly, about 1/2 inch thick.

Bake for 20-25 minutes or until the edges are golden brown.

Remove from the oven and let it cool for a few minutes.
