  1. Boil the potatoes until tender. Drain and mash them.
  2. In a pan, heat olive oil and sauté the onions until golden brown.
  3. In a large bowl, mix mashed potatoes, sautéed onions, salt, and pepper.
  4. In a separate bowl, combine all-purpose flour, baking powder, and salt. Add water gradually and mix to form a dough.
  5. Knead the dough on a floured surface until smooth.
  6. Divide the dough into small balls and roll each ball into a thin circle.
  7. Place a spoonful of the potato mixture in the center of each circle and fold the edges to form a knish shape.
  8. Preheat the oven to 375°F (190°C) and brush the knishes with melted vegan butter.
  9. Bake for 25-30 minutes or until golden brown.
  10. Serve hot and enjoy!
