Vegan Knishes
Knishes are a traditional Jewish dish that originated in Eastern Europe and are now popular around the world.

Boil the potatoes until tender. Drain and mash them.

In a pan, heat olive oil and sauté the onions until golden brown.

In a large bowl, mix mashed potatoes, sautéed onions, salt, and pepper.

In a separate bowl, combine all-purpose flour, baking powder, and salt. Add water gradually and mix to form a dough.

Knead the dough on a floured surface until smooth.

Divide the dough into small balls and roll each ball into a thin circle.

Place a spoonful of the potato mixture in the center of each circle and fold the edges to form a knish shape.

Preheat the oven to 375°F (190°C) and brush the knishes with melted vegan butter.

Bake for 25-30 minutes or until golden brown.
