Ingredients
  • 2 teaspoon Olive oil
  • 1 medium Onion
  • 1 medium Bell pepper
  • 2 stalk Celery
  • 3 clove Garlic cloves
  • 2 medium Tomatoes
  • 2 cup Vegetable broth
  • 1 cup Long-grain brown rice
  • 2 tablespoon Cajun seasoning
  • 1 teaspoon Paprika
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 2 leaf Bay leaves
  • 1 can Kidney beans
  • 1 cup Frozen okra
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 3 stalk Green onions
  • 2 tablespoon Fresh parsley
  • 4 piece Lemon wedges
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, bell pepper, celery, and garlic. Sauté until vegetables are tender.
  3. Stir in tomatoes, vegetable broth, rice, Cajun seasoning, paprika, thyme, oregano, and bay leaves.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes.
  5. Add kidney beans and okra. Cook for an additional 10 minutes.
  6. Season with salt and black pepper.
  7. Garnish with green onions and fresh parsley.
  8. Serve with lemon wedges.
