Vegan Frosted Sugar Cookie Bars
Sugar cookies have been enjoyed since the 1700s and were originally known as ‘Nazareth cookies’ as they were made by German Protestant settlers in Nazareth, Pennsylvania.
This is vegan and gluten free recipe. Dish can be prepared in 65 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 11.

Preheat the oven to 350°F (175°C) and line a baking dish with parchment paper.

In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.

In a separate bowl, cream together the vegan butter and granulated sugar until light and fluffy.

In a small bowl, combine the flaxseed meal and water, let it sit for 5 minutes to thicken. Then add the flaxseed mixture and vanilla extract to the creamed butter and sugar. Mix well.

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.

Press the dough evenly into the prepared baking dish and bake for 12-15 minutes, or until the edges are lightly golden.

Remove from the oven and let it cool completely in the dish.

In a mixing bowl, whisk together the powdered sugar and plant-based milk until smooth. Add food coloring if desired.

Once the cookie bars have cooled, spread the frosting evenly over the top.

Allow the frosting to set for about 30 minutes before cutting into bars.
