  • 3 clove Garlic cloves
  • 1 medium Bell pepper
  • 2 medium Carrots
  • 1 can Canned diced tomatoes
  • 1 can Black beans
  • 1 cup Corn kernels
  • 4 cup Vegetable broth
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 4 wedge Lime
  • 2 tablespoon Fresh cilantro
  • 1 medium Avocado
Instructions
  1. Heat oil in a large pot over medium heat. Add the onion, garlic, bell pepper, and carrots. Cook until the vegetables are tender.
  2. Add the diced tomatoes, black beans, corn kernels, vegetable broth, chili powder, cumin, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Serve the soup hot, garnished with fresh cilantro, avocado slices, and a squeeze of lime juice.
