Preheat the oven to 350°F (175°C).

In a large bowl, combine the rolled oats, almond flour, cocoa powder, baking powder, and salt.

In a separate microwave-safe bowl, melt the coconut oil. Add the maple syrup and vanilla extract to the melted coconut oil and mix well.

Pour the wet mixture into the dry mixture and stir until well combined. Fold in the vegan chocolate chips.

Line a baking sheet with parchment paper. Scoop tablespoon-sized portions of the dough onto the baking sheet, spacing them apart.

Bake for 10-12 minutes or until the edges are set. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
