  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, combine the crust ingredients and blend until well combined. Press the mixture into the bottom of a greased springform pan.
  3. Bake the crust for 10 minutes, then remove from the oven and let cool.
  4. In a blender, combine the cashews, coconut oil, maple syrup, lime juice, agar agar powder, coconut cream, vanilla extract, and lime zest. Blend until smooth and creamy.
  5. Pour half of the filling mixture over the cooled crust.
  6. In a small bowl, mix the raspberry puree and raspberry jam. Drop spoonfuls of the raspberry mixture onto the filling in the pan. Use a toothpick or skewer to swirl the raspberry mixture into the filling.
  7. Pour the remaining filling mixture over the raspberry swirl.
  8. Bake the cheesecake for 30-35 minutes, or until set.
  9. Remove from the oven and let cool for 10 minutes, then refrigerate for at least 2 hours to set completely.
  10. Once set, remove the cheesecake from the pan and garnish with fresh raspberries. Slice and serve.
