  1. Preheat the oven to 180°C (350°F). Grease a cake pan.
  2. In a large bowl, combine the all-purpose flour, almond flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate bowl, mix together the grated carrots, coconut oil, maple syrup, vanilla extract, and almond milk.
  4. Gradually add the wet mixture to the dry mixture, stirring until well combined.
  5. Fold in the walnuts, raisins, and coconut flakes.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let the cake cool in the pan for 10 minutes.
  9. Transfer the cake to a wire rack and let it cool completely.
  10. Once cooled, frost the cake with your favorite vegan cream cheese frosting.
