Ingredients
  • 2 cup Blueberries
  • 1 cup All-purpose flour
  • 1/2 cup Granulated sugar
  • 1 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Non-dairy milk
  • 1/4 cup Vegetable oil
  • 1/2 teaspoon Vanilla extract
  • 1 tablespoon Lemon juice
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the blueberries, 1/4 cup of sugar, and lemon juice. Stir well.
  3. In a separate bowl, whisk together the flour, remaining sugar, baking powder, and salt.
  4. Add the non-dairy milk, vegetable oil, and vanilla extract to the dry ingredients. Stir until just combined.
  5. Pour the blueberry mixture into a baking dish. Spoon the batter over the top, spreading it evenly.
  6. Bake for 35-40 minutes, or until the cobbler is golden brown and the blueberries are bubbling.
  7. Remove from the oven and let it rest for 10 minutes before serving.
  8. Serve warm and enjoy!
