Ingredients
  • 1 cup Lentils
  • 1 cup Quinoa
  • 1 cup Mushrooms
  • 1 medium Onion
  • 2 clove Garlic
  • 2 tablespoon Flaxseed Meal
  • 2 tablespoon Tomato Paste
  • 2 tablespoon Tamari Sauce
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Cumin
  • 2 tablespoon Olive Oil
  • 1 cup Whole Wheat Bread Crumbs
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 4 piece Burger Buns
  • 4 leaf Lettuce
  • 4 slice Tomato
  • 4 slice Red Onion
  • 4 tablespoon Vegan Mayo
Instructions
  1. Cook the lentils and quinoa according to package instructions.
  2. In a pan, sauté the mushrooms, onion, and garlic until softened.
  3. In a food processor, combine the cooked lentils, quinoa, sautéed mushrooms, onion, and garlic. Pulse until well combined.
  4. Transfer the mixture to a bowl and add flaxseed meal, tomato paste, tamari sauce, smoked paprika, cumin, olive oil, bread crumbs, salt, and black pepper. Mix well.
  5. Shape the mixture into burger patties or meatballs.
  6. Heat olive oil in a pan and cook the patties or meatballs until browned on both sides.
  7. If making burgers, lightly toast the burger buns.
  8. Assemble the burgers with lettuce, tomato, red onion, and vegan mayo.
  9. Serve hot and enjoy!
