  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, pulse the walnuts, almonds, and pistachios until finely chopped.
  3. In a bowl, mix the chopped nuts with cinnamon and ground cloves.
  4. In a saucepan, combine agave syrup, lemon juice, and water. Heat over medium heat until it boils. Remove from heat and set aside.
  5. Melt the vegan butter.
  6. Brush a baking dish with melted vegan butter.
  7. Place a sheet of phyllo dough in the baking dish and brush with melted vegan butter. Repeat with 6 more sheets.
  8. Spread half of the nut mixture evenly over the phyllo dough.
  9. Place another sheet of phyllo dough on top of the nut mixture and brush with melted vegan butter. Repeat with 6 more sheets.
  10. Spread the remaining nut mixture evenly over the phyllo dough.
  11. Place another sheet of phyllo dough on top of the nut mixture and brush with melted vegan butter. Repeat with 6 more sheets.
  12. Cut the baklava into diamond or square shapes.
  13. Pour the syrup evenly over the baklava.
  14. Bake in the preheated oven for 40 minutes, or until golden brown.
  15. Remove from the oven and let it cool for at least 1 hour before serving.
