  1. Cut tofu, broccoli, carrot, bell pepper, and mushrooms into bite-sized pieces.
  2. Heat sesame oil in a pan and sauté garlic and ginger until fragrant.
  3. Add tofu and stir-fry for 3 minutes.
  4. Add vegetables and continue stir-frying for 5 minutes.
  5. In a small bowl, mix soy sauce, rice vinegar, salt, and black pepper.
  6. Pour the sauce over the vegetables and tofu. Stir well to coat.
  7. Cover the pan and let it simmer for 5 minutes.
  8. Serve hot with steamed rice or noodles.
