Ingredients
  • 1 can Black beans
  • 1 cup Corn kernels
  • 2 medium Tomatoes
  • 1 small Red onion
  • 1 medium Bell pepper
  • 1 small Jalapeno pepper
  • 1 bunch Cilantro
  • 1 medium Lime
  • 1 ripe Avocado
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Cumin
Instructions
  1. Rinse and drain the black beans and corn kernels.
  2. Chop the tomatoes, red onion, bell pepper, jalapeno pepper, and cilantro.
  3. In a large bowl, combine the black beans, corn kernels, chopped vegetables, and cilantro.
  4. Squeeze the juice of one lime over the mixture.
  5. Drizzle olive oil and sprinkle salt, black pepper, and cumin.
  6. Gently toss everything together until well combined.
  7. Cover the bowl and let it rest in the refrigerator for at least 30 minutes.
  8. Before serving, dice the avocado and gently fold it into the mixture.
  9. Serve chilled and enjoy!
