  • 15 ounce Canned chickpeas
  • 1/2 cup Red onion
  • 1/2 cup Bell pepper (any color)
  • 1/2 cup Cherry tomatoes
  • 1/4 cup Fresh parsley
  • 2 tablespoon Olive oil
  • 2 tablespoon Red wine vinegar
  • 1 clove Garlic
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
Instructions
  1. Drain and rinse the kidney beans and chickpeas.
  2. Finely chop the red onion, bell pepper, cherry tomatoes, and fresh parsley.
  3. In a large bowl, combine the kidney beans, chickpeas, red onion, bell pepper, cherry tomatoes, and fresh parsley.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, and black pepper.
  5. Pour the dressing over the bean mixture and toss to combine.
