Cut the eggplants in half lengthwise and score the flesh with a knife.

Brush the eggplants with olive oil and sprinkle with salt and black pepper.

Grill or bake the eggplants for 20 minutes, or until the flesh is soft and golden.

Meanwhile, heat olive oil in a pan and sauté the onions and garlic until translucent.

Add the tomatoes, cumin, salt, and black pepper to the pan and cook until the tomatoes are soft.

Remove the eggplants from the grill or oven and let them rest for 10 minutes.

Scoop out the flesh of the eggplants and chop it finely.
