Ingredients
  • 2 large Eggplants
  • 3 medium Tomatoes
  • 1 medium Green Bell Pepper
  • 1 medium Red Bell Pepper
  • 1 medium Onion
  • 2 clove Garlic cloves
  • 1 bunch Parsley
  • 1 small Lemon
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
Instructions
  1. Preheat the oven to 200°C (400°F). Roast the eggplants for 25-30 minutes or until the skin is charred.
  2. Peel and chop the roasted eggplants.
  3. In a pan, heat olive oil and sauté the chopped onion, garlic, and bell peppers until softened.
  4. Add the chopped tomatoes and cook until they are soft.
  5. Add the roasted eggplants to the pan and mix well. Cook for another 5-10 minutes.
  6. Season with salt and black pepper.
  7. Serve the Turkish Pabucaki with freshly chopped parsley and a squeeze of lemon juice. Enjoy!
