Rinse the lentils and set aside.

In a large pot, heat olive oil over medium heat.

Add the chopped onion and garlic, and sauté until translucent.

Add the chopped carrot, potato, and tomato, and cook for a few minutes.

Add the rinsed lentils, cumin, paprika, salt, and black pepper to the pot.

Pour in enough water to cover the ingredients, bring to a boil, then reduce heat and simmer for about 25-30 minutes, or until the lentils are tender.

Use an immersion blender or a regular blender to blend the soup until smooth.

Stir in the lemon juice.

Serve hot, garnished with fresh parsley.
