  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat. Add the chopped onion, carrot, celery, and garlic. Cook until the vegetables are softened.
  3. Stir in the tomato paste, cumin, coriander, paprika, turmeric, and cayenne pepper. Cook for another minute.
  4. Add the rinsed lentils, vegetable broth, and water to the pot. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until the lentils are tender.
  5. Remove the pot from heat and use an immersion blender to blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend in batches.
  6. Return the soup to low heat and stir in the lemon juice, cilantro, salt, and black pepper. Cook for another 5 minutes.
