In a food processor, add oats, dried apricots, Medjool dates, unsweetened shredded coconut, cashews, and almonds. Pulse until everything is finely chopped.

In a small saucepan, heat honey, coconut oil, vanilla extract, and pineapple juice over low heat until melted and well combined.

Pour the liquid mixture into the food processor and pulse until the mixture comes together.
