The name ‘Three Sisters’ refers to the traditional Native American agricultural practice of planting corn, beans, and squash together, as they support and benefit from each other’s growth.

  1. Preheat the oven to 400°F (200°C). Cut the butternut squash in half lengthwise and remove the seeds. Place the squash halves on a baking sheet, cut side down, and roast for 30 minutes or until tender.
  2. While the squash is roasting, heat olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened.
  3. Add the corn, black beans, cumin, paprika, salt, and pepper to the skillet. Cook for 5 minutes, stirring occasionally.
  4. Once the squash is cooked, remove it from the oven and let it cool slightly. Scoop out the flesh and add it to the skillet with the other ingredients. Stir well to combine.
  5. Cook the mixture for an additional 5 minutes, or until heated through.
  6. Serve the Three Sisters Squash topped with fresh cilantro and a squeeze of lime juice.
