Three-Bean Chili
Chili con carne, a spicy stew with meat, is a popular variation of chili, but Three-Bean Chili is a vegetarian and vegan alternative that is just as delicious and satisfying.

Heat olive oil in a large pot over medium heat.

Add chopped onion, bell pepper, and minced garlic. Sauté until onions are translucent.

Add chili powder, cumin, paprika, salt, and black pepper. Stir well.

Pour in tomato sauce, diced tomatoes, and water. Stir to combine.

Add kidney beans, black beans, and pinto beans (drained and rinsed). Stir gently.

Bring the chili to a boil, then reduce heat to low. Cover and simmer for 30 minutes, stirring occasionally.

Remove from heat and let it rest for 5 minutes.
