Ingredients
  • 500 gram Zucchini
  • 1 piece Onion
  • 2 clove Garlic
  • 2 cup Vegetable broth
  • 2 tablespoon Olive oil
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 20 gram Fresh basil leaves
  • 4 tablespoon Greek yogurt
Instructions
  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
  2. Add the sliced zucchini to the pot and cook for a few minutes until slightly tender.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 10 minutes.
  4. Remove the pot from heat and let it cool slightly. Use an immersion blender to puree the soup until smooth.
  5. Season with salt and black pepper to taste.
  6. Serve the soup hot, garnished with fresh basil leaves and a dollop of Greek yogurt.
