Ingredients
  • 1 can Black Beans
  • 1 cup Corn
  • 2 medium Tomatoes
  • 1 medium Red Onion
  • 1 medium Bell Pepper (any color)
  • 1 small Jalapeno Pepper
  • 1 cup Cilantro
  • 2 juice of Lime
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic Powder
  • 1 bag Tortilla Chips
Instructions
  1. Rinse and drain the black beans and corn.
  2. Chop the tomatoes, red onion, bell pepper, jalapeno pepper, and cilantro.
  3. In a large bowl, combine the black beans, corn, tomatoes, red onion, bell pepper, jalapeno pepper, and cilantro.
  4. In a small bowl, whisk together the lime juice, olive oil, salt, black pepper, cumin, and garlic powder.
  5. Pour the dressing over the bean and vegetable mixture and toss to combine.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Serve with tortilla chips.
