Thai Tofu and Squash Curry

Heat oil in a large pan over medium heat. Add tofu and cook until golden brown. Remove tofu from the pan and set aside.

In the same pan, add butternut squash and cook for 5 minutes. Add red curry paste and cook for another minute.

Pour in coconut milk, vegetable broth, fish sauce (if using), brown sugar, and lime juice. Stir well.

Add red bell pepper and green beans. Simmer for 10-15 minutes until the vegetables are tender.

Stir in cooked tofu and Thai basil leaves. Cook for an additional 2 minutes.

Season with salt to taste.

Serve hot with steamed rice.
