Ingredients
  • 200 gram Rice noodles
  • 100 gram Carrots
  • 100 gram Cucumber
  • 100 gram Red bell pepper
  • 20 gram Fresh cilantro
  • 20 gram Fresh mint leaves
  • 30 gram Roasted peanuts
  • 2 teaspoon Lime juice
  • 2 teaspoon Soy sauce
  • 1 teaspoon Sesame oil
  • 1 teaspoon Maple syrup
  • 1 clove Garlic
  • 1 piece Red chili pepper
Instructions
  1. Cook the rice noodles according to the package instructions. Drain and rinse with cold water.
  2. Julienne the carrots, cucumber, and red bell pepper.
  3. In a large bowl, combine the cooked rice noodles, julienned vegetables, fresh cilantro, and mint leaves.
  4. In a small bowl, whisk together lime juice, soy sauce, sesame oil, maple syrup, minced garlic, and chopped red chili pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Garnish with roasted peanuts.
  7. Let the salad rest for 10 minutes before serving.
