Preheat the grill to medium-high heat.

Slice the eggplants in half lengthwise and score the flesh in a crisscross pattern. Sprinkle with salt and let sit for 10 minutes to draw out excess moisture.

In a small bowl, combine soy sauce, lime juice, minced garlic, and chopped Thai chili peppers.

Pat the eggplants dry with a paper towel and brush them with vegetable oil.

Grill the eggplants, cut side down, for about 5 minutes or until charred and softened. Flip and grill for another 5 minutes.

While the eggplants are grilling, heat 1 tablespoon of vegetable oil in a pan over medium heat. Add the tofu and stir-fry until golden brown.

Remove the eggplants from the grill and let them rest for a few minutes. Then, scoop out the flesh and roughly chop it.

In the same pan with the tofu, add the chopped eggplant, sliced green onions, and the soy sauce mixture. Stir-fry for 2-3 minutes.

Season with salt and pepper to taste. Remove from heat.

Serve the charred eggplant and tofu mixture garnished with fresh cilantro. Enjoy!
