Teriyaki Veggy Sandwich

Press tofu to remove excess water and cut into 1/4-inch thick slices.

In a bowl, combine teriyaki sauce and sesame oil.

Marinate tofu slices in the mixture for 10 minutes.

Preheat grill or sauté pan over medium heat.

Cook tofu for 3-4 minutes on each side until browned.

Remove tofu from heat and set aside.

Slice bell peppers, zucchini, and carrot into thin strips.

In the same pan, sauté the sliced vegetables for 5 minutes.

Toast the bread slices.

Assemble the sandwich by layering lettuce, tomato, grilled tofu, sautéed vegetables, and another slice of bread.

Cut the sandwich in half and serve.
