Soak the mixed beans in water overnight.

In a large pot, heat the olive oil and sauté the onion, carrot, celery, and garlic until softened.

Drain the soaked beans and add to the pot.

Add the vegetable stock, tomatoes, bay leaves, thyme, rosemary, parsley, salt, and black pepper.

Bring to a boil and let simmer for 1 hour.

Remove the bay leaves, thyme, rosemary, and parsley sprigs.

Using an immersion blender, blend the soup until desired consistency is reached.

Serve hot and garnish with fresh parsley.
