Ingredients
  • 1.5 cup Basmati rice
  • 1 cup Mixed vegetables (carrots, peas, bell peppers, etc.)
  • 1 medium-sized Onion
  • 2 clove Garlic cloves
  • 1 teaspoon Ginger
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin powder
  • 2 cup Vegetable broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoon Fresh cilantro
  • 1 tablespoon Lemon juice
Instructions
  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a large pot, heat some oil and sauté the chopped onion, garlic, and ginger until fragrant.
  3. Add the mixed vegetables and cook for a few minutes.
  4. Stir in the turmeric powder and cumin powder.
  5. Add the rinsed basmati rice and stir well to coat the rice with the spices.
  6. Pour in the vegetable broth and season with salt and black pepper.
  7. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the rice is cooked and the liquid is absorbed.
  8. Remove from heat and let it rest for 5 minutes.
  9. Fluff the rice with a fork and garnish with fresh cilantro and a squeeze of lemon juice.
  10. Serve hot and enjoy!
