Szechuan Style Eggplants, also known as ‘Fish-Fragrant Eggplants’, is a popular dish from the Szechuan province in China. Despite its name, it does not contain any fish but gets its unique flavor from the combination of garlic, ginger, and chili bean paste.

Cut the eggplants into bite-sized pieces.

Heat oil in a wok or pan and add garlic, ginger, and Szechuan peppercorns. Stir-fry for a minute.

Add eggplants and stir-fry until they are slightly softened.

Add chili bean paste, soy sauce, sugar, and vinegar. Stir-fry for another 2-3 minutes.
