  1. Preheat the oven to 375°F (190°C).
  2. Cook the jumbo pasta shells according to the package instructions. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic and sauté until softened.
  4. Add Swiss chard and cook until wilted. Remove from heat and set aside.
  5. In a bowl, crumble the tofu and add tomato sauce, dried oregano, dried basil, salt, and black pepper. Mix well.
  6. Stuff each cooked pasta shell with the tofu mixture and place in a baking dish.
  7. Pour any remaining tofu mixture over the stuffed shells.
  8. Cover the baking dish with foil and bake for 20 minutes.
  9. Remove the foil, sprinkle vegan mozzarella cheese on top, and bake for an additional 10 minutes until the cheese is melted and bubbly.
  10. Garnish with fresh parsley and serve hot.
