Peel and chop the sweet potatoes, onion, and garlic.

Heat olive oil in a large pot over medium heat.

Add the chopped onion and garlic to the pot and sauté until softened.

Add the sweet potatoes, vegetable stock, coconut milk, ground cumin, ground coriander, salt, and black pepper to the pot.

Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes, or until the sweet potatoes are tender.

Use an immersion blender or transfer the soup to a blender to puree until smooth.

Return the soup to the pot and stir in the lime juice.
