Peel and dice the sweet potatoes into small cubes.

Rinse the rice under cold water until the water runs clear.

In a large pot, bring water to a boil and add the diced sweet potatoes. Cook for about 5 minutes or until slightly tender.

Drain the sweet potatoes and set aside.

In the same pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.

Add the rice and stir-fry for a minute.

Add the cooked sweet potatoes, soy sauce, sesame oil, salt, and black pepper. Mix well.

Pour in the water and bring to a boil.

Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is cooked.

Remove from heat and let it rest for 5 minutes.

Fluff the rice with a fork and garnish with chopped spring onions.
