Preheat the oven to 425°F (220°C).

Peel and dice the sweet potatoes into bite-sized cubes.

Core and chop the apples into small pieces.

Thinly slice the red onion.

In a large bowl, combine the sweet potatoes, apples, red onion, olive oil, maple syrup, cinnamon, and salt. Toss until well coated.

Spread the mixture onto a baking sheet and roast for 20 minutes or until the sweet potatoes are tender and slightly caramelized.

In the meantime, roughly chop the pecans.

Once the sweet potato mixture is done, remove from the oven and let it cool for 5 minutes.

Transfer the roasted mixture to a serving dish and sprinkle with chopped pecans and dried cranberries.
