Sweet Potato and Basil Soup

Peel and chop the sweet potatoes, onion, and garlic.

Heat olive oil in a large pot and sauté the onion and garlic until fragrant.

Add the sweet potatoes and vegetable stock to the pot. Bring to a boil and then reduce heat to simmer for 20 minutes or until sweet potatoes are tender.

Remove from heat and let cool slightly. Using a blender, blend the soup until smooth.

Return the soup to the pot and stir in the basil leaves. Season with salt and black pepper.
