  1. Peel and chop the sweet potatoes, apples, and onion.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion and cook until translucent.
  4. Add the sweet potatoes, apples, vegetable broth, ground cinnamon, ground nutmeg, salt, and black pepper to the pot.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes or until the sweet potatoes are fork-tender.
  6. Remove from heat and let cool slightly.
  7. Using an immersion blender or regular blender, blend the soup until smooth.
  8. Return the soup to the pot and stir in the coconut milk.
  9. Heat the soup over low heat until warmed through.
  10. Serve hot and enjoy!
