Sweet Bell Pepper Rice

Cook the rice according to package instructions. Set aside.

Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic. Cook until onion is translucent.

Add sliced bell peppers and cook for 5 minutes, until they are slightly softened.

Add cooked rice to the skillet and stir well to combine. Season with soy sauce, salt, and black pepper.

Cook for another 5 minutes, stirring occasionally.

Garnish with chopped spring onion and parsley.
