  3. Add the onion, carrots, celery, and garlic. Sauté until vegetables are tender.
  4. Add the split peas, vegetable broth, water, salt, and black pepper to the pot. Bring to a boil.
  5. Reduce heat, cover, and simmer for 45 minutes or until split peas are soft.
  6. Remove from heat and let the soup rest for 10 minutes.
  7. Using an immersion blender or regular blender, blend the soup until smooth.
  8. Return the soup to the pot and heat over low heat.
  9. Stir in the fresh mint leaves, clementine zest, and clementine juice.
  10. Cook for an additional 5 minutes.
